Food is a basic need for every human being. For centuries, humanity has used the process of food preservation to preserve food for future use. Preservation is the process of keeping organic substances from decay. The process of preserving food has evolved over time, but they all follow the same basic concept. PRINCIPLES OF PRESERVATION (1) During the preservation process, food should not be damaged. There are three principles of food preservation: Elimination of microorganisms: this can be done by using acids, sugar or salts, radiation, adding chemicals, smoke, changing the concentration of oxygen, an increase or decrease in temperature, or drying.Inactivation of enzymes: Control enzymes by increasing temperature, removing oxygen, using acids, or adding chemicals.3) Elimination of insects, worms and rats: using protective packaging and sanitation.
