    In an ever-changing world, it's no surprise that something as simple as bread is also evolving rapidly. Health-conscious bread consumers have finally had an impact on the products available to the public. Bonné said that in 2003, more than 32 million Americans were on a low-carb diet (Msnbc.com). Crash and fad diets have hit the public with claims that carbohydrates alone are responsible for the drastic increase in obesity and other health risks. These big claims are hurting the booming bakery industry. Many fad diets were unplanned because marketing tactics can change the entire market in a matter of weeks. The bread industry was an increasing growth industry until diets such as the Atkins diet and the South Beach diet were made public. The bread industry had never experienced such a drastic change in product demand, and many companies were unable to keep up. Businesses that were able to meet demand by offering healthier, more innovative options to their customers suffered in different ways. These companies have experienced rapid growth thanks to new low-carb products; Fiber-laden options have become available. Many companies had to close factories that provided jobs to a majority of the state's residents. Diets such as the Atkins diet and the South Beach diet hit the traditional bread industry hard, initiating changes that ultimately benefited the company and consumers by providing us with better-tasting breads. cultivation.
