Breeding focused on meat production has improved over time thanks to the strict genetic selection that is implemented to conserve and transmit from generation to generation characteristics such as marbling and tenderness of beef. Variations in beef tenderness between breeds have been reported by Marshall (1999) and Burrow et al. (2001); It is one of the most valued attributes (Miller, 1992; Boleman et al., 1997). Many genetic traits linked to meat quality involve a specific number of genes, with some genes in particular expressing a significant proportion of the variability in meat composition and quality (Burrow et al., 2001). The objective is to identify candidate genes in meat expression. quality of beef, one of the candidate genes is the PPARGC1 gene which codes for the peroxisome proliferator-activated receptor gamma coactivator 1 alpha, which is a cofactor which is involved in the transcription of certain genes, including MEF2 (Muscle Enhancer Factor) which concerns adipose tissue.
